🐟 Traditional Canarian Recipe: Onioned Cod (Bacalao Encebollado)
Cod is a staple in Canarian cooking, especially for family gatherings and special occasions. This version, with sweet caramelised onions, is a simple yet flavourful favourite.
Ingredients (serves 4):
500 g of desalted cod fillets
3 large onions
3 garlic cloves
1 bay leaf
1 tsp of sweet paprika
Olive oil (extra virgin)
A splash of dry white wine
Salt and black pepper to taste
Fresh parsley (optional)

Instructions:
Slice the onions and garlic finely.
In a wide pan, heat olive oil and gently cook the onion, garlic and bay leaf until soft and golden (about 20 minutes).
Stir in the paprika and immediately add the white wine. Let it reduce.
In a separate pan, lightly sear the cod on both sides.
Add the cod to the onion mix and cook on very low heat for another 10 minutes.
Serve hot, topped with fresh parsley and paired with wrinkled potatoes or white rice.
